Salvia Officinalis
Salvia comes from the Latin "salvare", to heal: quite a program! Sages constitute a group of more than 500 species, including a dozen native to France. Sage officinalis sees its purplish blue flowers bloom in June-July. Spontaneous throughout the south of France, sage flourishes on the arid slopes, barren hillsides and rockeries of the Mediterranean region. It is also found in France in Lyonnais, Saône et Loire, Cantal and Lot, without exceeding an altitude of 800 meters. Its leaves have this powerful and bitter taste characteristic of the Labiatae.
